I love the tarty sweetness of lemon curd....but wanted something less sugary.  I love Noosa yogurt, but can't justify 35g of sugar in 1 tub.  So I've been experimenting and am super pleased with this easy lemon curd.  Pairs perfectly with Fage 0% Greek Yogurt, and/or berries and granola. 


Lemon Curd

1 large egg

2 egg whites

3/4 cup xylitol* or sugar

2/3 cup fresh squeezed lemon juice

2 T. lemon zest

1 T. butter

In a saucepan, whisk together egg, egg whites, lemon juice, lemon zest and xylitol.  Turn heat to medium and add butter (if the heat is too high it will scramble the eggs).  Stir constantly until mixture thickens, 5-7 minutes
